Actually it may be like a giant space musket, they may not have put the power storage capacity to have multiple charges ready, or maybe there are other factors we don't know about, like component overheating, or something like that. Either way it's science fiction, not science fact, so whatever happened in the movie can be assumed to be cannon.

I'm pretty sure the first Death Star could only fire one shot per day, but they still could have had a million other ships lightspeed there and blow up Yavin 20 times over.

Or maybe it's exactly like a giant space musket. We don't know key factors, like the capacity of the energy storage system compared to the output of the main weapon, the output of the main weapon compared to the capacity of the power plant of the Death Star, or several other factors that would determine how rapidly the Death Star can fire its primary weapon for planet-busting purposes. Without knowing these details, we can't say that the movie didn't go the most realistic way.
